The Best Raw Vegan Broccoli Cheddar Soup EVER in 3 Steps!



I'm addicted to the creamy goodness of this broccoli cheddar soup. It takes me back to a childhood lunchroom staple of broccoli smothered in warm, gooey cheese. It's comfort food that tastes so bad you won't believe it's good! You can't go wrong with a simple, healthy recipe:


Directions: 1.) Drain and rinse cashews well. 2.) Blend everything but the broccoli florets in your blender until its completely smooth. 3.) Pour into bowls and top with the broccoli florets.

If you have a high speed blender like a Vita-mix (highly recommended!) you can let this soup run longer in the blender to heat it up. If you don't, you can simply pop your soup into the microwave. Don't try to make it hot! Just gently warm it in the microwave.

  2. Aw man,why does my kid have to be allergic to nuts?(I always ask this question when I want to make something with pecans too)

    1. Oh, that's no fun! I do need to share more healthy raw vegan recipes that don't feature nuts. You can use veggies like zucchini to add creaminess to a lot of recipes. I love the recipes shared on this YouTube channel for ideas: http://www.youtube.com/user/RawfullyOrganic

  3. Looks yummy! I wish I could eat raw broccoli though. Every time I eat raw cabbagey foods I get gallbladder attacks and feel like I'm dying. :P I have recently become obsessed with vegan ranch dressing. Have any good recipes for it? :)

    1. I do! If you blend dill, cashews, a pinch of salt and pepper, garlic powder and onion powder to taste and zucchini (I'd say 1/4 cup cashews, 1 to 2 zucchinis, and as much Dill as you want) you'd get a dressing that's a lot like ranch but even yummier!

      That's a good idea, I think I'll have to play with healthy raw dressing ideas...

      With this recipe you could cook the broccoli florets and add them to soup base. It would be delicious!

  6. This sounds yummy. I was actually eating vegan soup when I clicked your blog.

    My fav vegan soup: 3 carrots, 1 apple, 1 avocado, juice of 1/2 a lemon, 1/4cup nutritional yeast, 1tbs cumin, 1tbs curry powder, 1tbs garlic powder, & a pinch of salt, pepper and sugar .. blend SO GOOD
